After almost seven years from harvesting, and after a very
long aging of 60 months, Brut 2014 is ready to cross the cellar doors and fill
your glasses.
The grapes used to make this wine are the result of a
mild spring and of a very cool summer, characterized by frequent rainfalls and
low temperatures, which lasted from June on. The rainfalls slowed down the
vegetative development - and in part threatened the phytosanitary state of the
bunches - forcing us to a rigorous manual selection during harvesting.
The slow and regular ripening of the grapes, however, fostered
an intense aromatic endowment, while the accentuated temperature ranges assured
a lively acidity.
The cuvée of Chardonnay (60%) and Pinot Noir (40%) comes
from flower must only and is available in limited edition: 2348 bottles in
standard size and 200 magnums.
The dosage, less than 1 gram per liter, lets the
personality of the vintage emerge, which to the nose is elegant and captivating,
with notes of exotic fruit, yellow flowers and orange peel.
The dry and savory finish makes Brut 2014 the perfect
pairing for rich dishes like braised meats, roasts and baked fish. For those
who like to play at home: try it with baked tench of Clusane or Rovato
beef.
